Chanukah came and went, and I didn’t have a single latke. Yes, one jelly donut. Yes, plenty of chocolate. But no latkes. I almost bought one on the last night, but the $2.75 per tiny latke price scared me away.

SK has so many latke-like recipes, so hopefully I’ll be prepared for next year. Post-holiday, I had some time to stand over the stovetop to make something pan-fried. And so, these cauliflower and feta fritters were born.

 

They were pretty delicious. Especially with the addition of a cumin-yogurt and some pomegranate seeds on top. The fritters might look a little odd – that’s because our food co-op only had orange cauliflower (life is weird sometimes).
