Passover came and went….a while ago. Yes, the backlog continues. I have never made kugel before, though I have always enjoyed my aunts’ zucchini kugel over the past 30 or so years. SK does not yet have a zucchini kugel, so I went with the potato version for this year’s seder.
My version did not look nearly as delicious as SK’s version, which was sad. But it tasted good – like an oversized latke. Perhaps this could be an alternative to frying up lots of separate latkes come Chanukah time.
