I had the week between Christmas and New Year’s off, so I decided to take the opportunity to make more challenging breakfasts (see: waffles).
This breakfast slab pie is intense. Whole wheat pie crust, layer of cooked potatoes, eggs, cheese, spinach. Pretty much everything imaginable in one giant pie. I think I did one third of the recipe, too, and it could still feed us for multiple breakfasts.
Can you see the layers? It’s kind of beautiful. Definitely a good large-group breakfast option. Or a make-on-Sunday-and-eat-throughout-the-week option. J was a fan and has requested it multiple times since.
